Expect a wait on Sundays especially - the place gets busy and they're cooking to order. Arrive patient and arrive hungry.

The name is an honest statement of intent. The chicken comes out with a paste that's darker red than most spots - almost mahogany - and the fry on the exterior is crisp in the way that old-school Nashville hot chicken is supposed to be: thick and crackling, not airy. The flavor underneath the heat is also genuinely good; this is seasoned chicken, not just hot chicken. The dark meat here is especially strong, with the fat in the thigh and leg balancing the spice in a way that breast meat doesn't quite achieve.
