Prince's is where Nashville hot chicken began. Thornton Prince started the original in the 1940s and the family has been running it ever since. The South Nashville location on Nolensville Pike is the currently operating Prince's, having relocated after the original North Nashville location was lost. It's a sit-down experience in a no-frills space - you order, you wait, you eat. Parking is in the strip mall lot. Wait times on weekends can be long; call ahead if you're making a dedicated trip. This is the origin story of an entire regional food tradition.
The chicken at Prince's is fried in lard, the old way, and you can taste it. The crust has a density and richness that modern vegetable oil frying doesn't quite replicate. The spice paste is cayenne-forward with a complexity that comes from a recipe that hasn't changed in decades. White bread and pickles come standard - not as a gimmick, but because the bread absorbs the spice oil and the pickles cut through the richness. This is the configuration the dish was built for. Don't skip either component.
Five heat levels: Plain, Mild, Medium, Hot, and X-Hot. Plain is seasoned fried chicken - excellent chicken, but no heat. Mild at Prince's is actual heat; do not underestimate it if you're calibrated on chain-restaurant mild. Medium is where most experienced hot chicken eaters land for a satisfying visit. Hot is serious. X-Hot is a commitment. The heat at Prince's is oil-based, which means it comes on strong immediately and then continues to build. Have dairy nearby for the upper levels - water will not help.
Hours are daily, ten AM to ten PM. Waits on weekends can stretch forty-five minutes or more. The dining room is small. Service is counter-order, table-delivered. If you're coming from downtown, it's about fifteen minutes south on Nolensville Pike through an authentic Nashville neighborhood - no tourist infrastructure, just the city. That's appropriate for a restaurant that has been here longer than the tourist version of Nashville. Cash or card accepted.
Prince's is the reason to come to Nashville if you care about food history. This is the originating restaurant for a dish that now has outposts across the country. The quality is still there. The recipe hasn't chased trends. If you've only had Hattie B's, eating at Prince's will show you where Hattie B's comes from, stylistically. The X-Hot is legendary, but the Medium is more representative of what makes the restaurant important: seasoning that actually means something, heat that exists for flavor rather than spectacle.
